Wasn't that eerily sad watching him in that latest Star Trek?
Spock, in the old days was too cool to be seen looking like that these days.
It was just wrong on so many levels.
Almost like seeing some sort of former cutie at the beach that should NOT be wearing a bikini anymore.

]APPLE PEOPLE made me feel that I too must be getting old, because he looked like he was a 120 Y.O. and had aged 90 years since the late 60's.

Only got out on the bike twice (12 mi and 21 mi). You know how to make a mountain out of molehill? Don't ride you bike up any mountains or molehills for three months! whooped.

Recipe of the Week: Brown Rice Jambalaya

Brown Rice Jmabalaya (6 Pts)

Jambalaya serves 3 at 6 pts/per. Or you can just eat half of it for 9.5 points!

Ingredients:
1/2 cup brown rice
8 oz. peeled shrimp (marinated in Old Bay seasoning)
4 oz. chicken andouille sausage (Aidell's makes them in mini-sausauges)
1 Poblano peper
1 Green Jalapeno
1 Red Jalapeno (diced)
1 Green Bell Pepper
1 Red Bell Pepper (diced)
1 Habenero (OPTIONAL!!!)
3 cloves garlic (minced)
1/4 cup chopped red onion
2 cups chicken stock or broth
1 teaspoon Worchestchire sauce
1 teaspoon olive oil
1 teaspoon canola oil
1/2 Can whole tomatoes in sauce

Prep:
Marinate shrimp in old bay overnight

Spray poblano, green jalapeno, green bell pepper and habenero with cooking spray and place under high broiler. Turn after a few minutes to blacken all around. When blackened, place in a bowl and cover with plastic wrap. This allows the steam to separate the other skin from the peppers.

Cook:

Place rice pot over medium heat and add oil. Add garlic and red onion and season with a pinch of salt. Once the start to "sweat" add in diced red peppers (jalapeno and bell) and sausage (cut into small-ish bit size pieces).

Continue cooking until peppers start to soften.

Peel the roasted peppers, remove the seeds and rough chop. Add to pot.
Add Brown rice and stir for a few minutes
Add Chicken Stock and half can of tomatoes and sauce and season with salt and pepper. Stir well.

Lower heat to simmer and leave for 30 minutes. Check in 15 to ensure liquid isn't evaporated off!
When rice is soft and cooked thru, add shrimp and stir. Leave for 2-3 minutes, until shrimp is cooked through. Be sure to let all that Old Bay water get in their. Flavour!

The consistency should be like rice with a ladle of juice (see pic). May have to adjust chicken stock amount. Some have a much higher water content, so they end up not reducing well. You can start with 1 1/2 cups and check after 20 minutes and see if it needs the rest.
